When it comes to cooking, I prioritize making foods that are hard to find package free (like pasta and tortillas) over foods I can easily find in bulk (like granola). Since going zero waste, fresh pasta has become a favorite activity and dinner staple. My son and I can prepare the dough and cut the noodles in the time it takes to boil a pot of water! Once boiling, fresh pasta cooks in just 2-3 minutes. Yummm!


Homemade pasta recipe

Serves 2
(Adapted from Jamie Oliver’s homemade pasta video)

Ingredients
2 eggs
1 1/2 cups flour

Directions

  1. Combine eggs and flour in a food processor. Add water little by little until it starts to creates a big clump (less than 1/4 cup).
  2. Flour the dough ball a bit so it’s not too sticky. Use a pasta maker (we use a pasta attachment on our Kitchen Aid mixer) to progressively flatten dough to desired thickness. For fettuccine and linguine, we flatten the dough to setting 5.
  3. Cut dough into any shape your heart desires and enjoy!
