When it comes to cooking, I prioritize making foods that are hard to find package free (like pasta and tortillas) over foods I can easily find in bulk (like granola). Since going zero waste, fresh pasta has become a favorite activity and dinner staple. My son and I can prepare the dough and cut the noodles in the time it takes to boil a pot of water! Once boiling, fresh pasta cooks in just 2-3 minutes. Yummm!
Homemade pasta recipe
Serves 2

Ingredients
2 eggs
1 1/2 cups flour
Directions
- Combine eggs and flour in a food processor. Add water little by little until it starts to creates a big clump (less than 1/4 cup).
- Flour the dough ball a bit so it’s not too sticky. Use a pasta maker (we use a pasta attachment on our Kitchen Aid mixer) to progressively flatten dough to desired thickness. For fettuccine and linguine, we flatten the dough to setting 5.
- Cut dough into any shape your heart desires and enjoy!
