After neglecting to water our community garden plot for a few days during a heat wave, we were bracing for the worst, fully prepared to find a bunch of dead plants. Instead we found this enormous zucchini (and countless cucumbers)! 😲

We scraped out the zucchini seeds, shredded the flesh and froze it in glass containers to use in zucchini bread recipes year-round 😋

I’m thrilled that our community garden plot and our new raised beds are in full swing (finally). There’s nothing better than picking fresh veggies right before a meal! Plus, they’re cheap, plastic-free and don’t require a trip to the grocery store 🙌
