Chia seed pudding

One of my go-to desserts these days: vanilla chia seed pudding! It’s simple, delicious, vegan, healthy and kid-friendly 😃

To make this recipe with zero waste (or low waste):
• Buy chia seeds package-free from a bulk store (or compostable packaging)
• Buy milk in consigned glass container (or recyclable carton). For bonus points, you can even make your own plant-based milk 👍
• Buy maple syrup package-free from a bulk store (or in glass/metal container)


Vanilla chia seed pudding

Adapted from Clean Eating with Kids
Makes 2-3 servings

Ingredients

1/3 cup chia seeds
1 1/2 cups soy or almond milk *
2 tbsp maple syrup
1/2 tsp vanilla extract *

* I skip the vanilla extract by using vanilla-flavored soy milk 😉

Directions
1. Put everything in a repurposed glass jar, give it a good shake and store it in the fridge overnight.
2. Enjoy it for days afterward 😋
